It’s Easter! I hope the Bunny was generous to you all, but just in case he wasn’t here’s a recipe for some cute Yoshi Egg chocolate pops.

This recipe makes 14 Yoshi Egg pops.
What you will need: Two 7-egg shaped pop moulds, two small glass bowls, a metal spoon, 15 lollipop sticks, and a small saucepan.
Ingredients:
Green Chocolate Colouring
230g / 8 oz. White Chocolate (Finely chopped)
Preparing the Egg Moulds:
Place 30g / 1 oz. of the white chocolate in one of the bowls. Fill the saucepan with a small amount of water, and place the bowl over the saucepan.
Put the saucepan on a medium heat and bring the water to a simmer, slowly melt the chocolate. Once melted, add the green chocolate colouring to achieve the desired shade, mix well.
Using one of the lollipop sticks, dip it into the green chocolate. Using the lollipop stick like a paintbrush, create the three iconic spots on the inside of each egg mould. Remember the green spot pattern will be reversed on the mould!
Once each of the egg moulds have their spots, place them in the fridge to chill until set.
Making the Yoshi Eggs:
Meanwhile, use the same technique to melt the remainder of the white chocolate. Once the green spots are set, take the moulds from the fridge.
Using a small metal spoon, fill each of the egg moulds with some melted white chocolate. Place a lollipop stick so that it comes halfway up the egg onto the melted chocolate, rotate it so that it’s firmly coated.
Once each of the egg moulds are filled, gently tap the mould on a surface to knock out any air bubbles. Place the moulds in the fridge to chill until set.
Though incredibly simple to make with a little patience, these Yoshi Egg chocolate pops are adorable. Experiment by adding nuts, sprinkles or mini marshmallows to the chocolate for an additional touch.

Quiet, please… It’s snack time! Snackoos are the favourite treat of one prodigious forensic detective Ema Sky. What better way to ignore people you don’t want to talk to than appear to eat, well… er… something that looks a little like poop. (There have been far too many poop related posts lately! I apologise!) Snackoos are actually based on the traditional Japanese treat of Karinto (Karintou) which is a sweet deep-fried yeast based snack often drenched in a sugar syrup. Since “Snackoo” is a European and American localisation, I thought I should localise the recipe myself, as it seems Karinto recipes are few and far between! I hope none of you object… I’ve based mine on the traditional, but added an American twist and even coated them in chocolate, just like Ema loves.

This recipe makes 20 Snackoos.
What you will need: A deep pan, paper towels, a mixing bowl, greaseproof paper/baking parchment and a sieve.
Ingredients:
110g / 1 Cup Plain Flour
1 Tablespoon High Quality Cocoa Powder
1 Teaspoon Baking Powder
3 Tablespoons Brown Soft Sugar
1 Egg
40ml / ⅛ Cup Milk
1 Tablespoon Oil
Oil (For Frying)
100g Milk Chocolate
Making the Snackoos:
In a mixing bowl, sieve in the flour, cocoa powder, baking powder and sugar. Next add the milk, egg and oil and mix well. Allow the dough to stand for about 20 minutes in a cool place.
Meanwhile in a deep pot, heat some oil on a medium-high heat. Have paper towels prepared and something to scoop the Snackoos out with. You can tell when the oil is ready by dropping in a test piece of dough.
After 20 minutes, with well floured hands, roll out the Snackoos. The dough will be quite sticky, but this is normal! Keep the Snackoos quite long and thin, as they double in size when you cook them.
When you have all your Snackoos prepared, and the oil is warm enough, drop the Snackoos in one piece at a time. Fry them for no more than about 60 seconds. They should sizzle and expand instantly in the oil and be golden after about a minute. Rotate them to ensure even cooking.
Remove the Snackoos from the oil and drain them on paper towels until cool. Once they’re room temperature and dry they’re ready for their chocolate coating.
In a large bowl over a small pot of boiling water, melt the chocolate. Dip the Snackoos in one and a time, covering them evenly in the chocolate. Gently shake off any excess, then place on greaseproof paper or a wire rack to solidify before eating.
Snackoos are very unusual. The taste is somewhat sweet, savoury and salted; with a contrast between the soft, fried cookie-cake and chocolate. Despite the flavour combination, I found them to be quite addictive and enjoyed many a Snackoo with a cup of coffee or hot chocolate! I used a dark chocolate (since I’m allergic to milk chocolate) and the bitterness was wonderful. A white chocolate would also make a super sweet casing, so use whichever type of chocolate you prefer! A delicious little morsel I certainly wouldn’t waste throwing at anybody.

When I got to High School I was lucky enough to have one friend who also played games, who interestingly enough looked an awful lot like Link… He invited me over to his house with the intention of playing the Resident Evil GameCube remake, but instead we played the Legend of Zelda: The Wind Waker. All day. And wished we could consume this soup.

This recipe serves 6.
What you will need: A baking tray, a large pot and a blender.
Ingredients:
3 Large Parsnips
4 Large Carrots
2 Medium White Onions
2 Garlic Cloves
1 Teaspoon Crushed Dried Chilli (Optional)
1 Teaspoon Ground Ginger
Salt & Pepper
Olive Oil
900ml / 4 Cups Cuckoo, Chicken or Vegetable Stock
Cream
Fresh Chives
Making the Elixir Soup:
Preheat the oven to 200C/390F and prepare a baking tray. Chop up the parsnips, carrots and onions into roughly even-sized chunks. Finely chop one of the garlic gloves, and mix it in with the vegetables on the baking tray.
Cover the vegetables with a thin layer of olive oil. Season with salt and pepper to taste, then add the chilli and ginger. Roast the vegetables in the oven for 30-40 minutes until soft and golden.
Once the vegetables are cooked, remove them from the oven and set aside. In a large pot, heat a teaspoon of olive oil, finely chop the second clove of garlic then add it to the warm oil. Have your chicken or vegetable stock ready!
Add the roasted vegetables to the pot and turn the heat to low. Add half the stock to the pot, then blend. Gradually add the rest of the stock to thin the soup as you blend it; you may need a little more or less to get the right consistency.
Taste, and season again with salt and pepper if required. Serve the soup, then add a swirl of cream and some freshly chopped chives to garnish.
Whenever I eat something fresh and home made, I always feel super invigorated and powerful, and this soup did for me exactly what it does for Link! You’d think it’s a bit early in the calendar for such a hearty, warming soup, but today in Scotland I think Winter II arrived so it was more than appropriate. I enjoyed my Elixir Soup with some delicious rye bread, which will now be my comfort when in times of need during adventures to help a princess.

I first encountered Yoshi’s Cookies on Game and Watch Gallery 3 which I had for my Gameboy Color. The updated, ‘modern’, version of “Egg” on the cartridge involved Yoshi eating some Yoshi Cookies as prepared by Chef Mario. I never did get along very well with the Game and Watch Gallery, it was all about personal bests and high scores, and, as a renowned confident loser of the world, I was always uninterested in competing with myself. One thing I did want to do was eat those cookies though. I had dreams about those cookies against a haunting rendition of that ever panic-inducing music.

This recipe makes 20 cookies.
What you will need: A large bowl, a wooden spoon, a rolling pin, cookie cutters: a flower, a diamond, a heart, a large and a small circle, and a square, a baking tray, and greaseproof/baking paper.
Ingredients:
250g / 1¼ Cup Butter (Room Temperature)
140g / ⅔ Cup Caster/Super Fine Sugar
2 Egg Yolks
1½ Tablespoons Vanilla Extract
300g / 1¼ Cup Plain Flour
½ Tablespoon Cocoa Powder
¼ Teaspoon Ground Cinnamon
To Garnish:
Jams/Jellys
Purple
Red
Green
Icing/Confectioners Sugar
Water
Ground Cinnamon
Sugar
Making the Cookie Dough:
Preheat the oven to 180C/355F, and prepare a flat baking tray by lining it with greaseproof/baking paper.
In a large bowl, mix together to butter and sugar with a wooden spoon until well combined. Next add the egg yolks and vanilla extract and mix again. Sieve in the flour, and gently stir until a dough begins to form.
The dough may seem quite sticky and loose, if it’s too soft – place it in the fridge for around 30 minutes to firm it.
On a well floured surface and with floured hands, form the dough into a neat ball. Divide the dough evenly into six portions. Put four aside, as these will remain vanilla.
Take the left over two balls of dough; add cinnamon powder to one and kneed gently until combined. Add cocoa powder to the other and again, kneed until combined. You will now have four vanilla, one cinnamon and one chocolate dough.
Making the Yoshi Cookies:
Tips: Prepare one type of cookie at a time. With a well floured surface and rolling pin, roll out each portion to about ¼ inch thick, then cut out the desired shapes with the cookie cutters. Place the cookies on the prepared baking tray.
Start with three of the vanilla portions – these will be cut into the flower, the diamond and the heart shapes.
Next, take the cinnamon portion – cut out a large circle, and then a smaller circle from the middle.
You should have one chocolate and one vanilla portion left – these will become the checker-board cookie.
You can make the checker-board cookie a few ways. One way is by making a patterned block with 4 rectangular cuboids ‘glued’ together on the joins with egg white. Then slice the block to form the cookies.
If that sounds too tricky, try cutting out thin, small squares of dough and laying them on top of a square cookie to make the pattern – whatever you find easier.
With your cookies prepared and placed on the baking try, bake them in the oven for around 12 minutes or until golden brown.
Garnishing the Yoshi Cookies:
Take your jams/jellys and melt 2 tablespoons of each for about 10-20 seconds to make them a smoother, looser texture.
The diamond gets a green garnish, the flowers get a purple and the hearts get a red.
Taking a ¼ teaspoon of the appropriate colour, drop it in the middle of the cookie and carefully create an even shape for the centre.
For the cinnamon cookie, mix some icing sugar and a little water to make a paste. Brush it over the top of the cookie, then sprinkle with granulated sugar and ground cinnamon.
In Game and Watch Gallery 3 “Egg”, Yoshi saves the cookies from burning by eating them. This is the kind of tactic I like to employ while baking, I can respect Yoshi for this - he’s my kind of person. Delightfully buttery, these cookies are paired perfectly with their tart jammy centres, so it’s totally understandable why the Yoshis are such big fans. As for the Yoshi cookie, I think it might deserve a post of its own…

Lavaridge Town’s speciality, and now a Gourmet Gaming speciality too! Originally, the Lava Cookie is referred to as a “rice cracker” which frankly doesn’t sound too exciting, so I turned to the awesome poké visual appeal of this trusty status heal for inspiration. Combining the idea of an Asian “rice cracker” and a “cookie”, I was pleasantly surprised by my rash decision to create the Lava Cookie as an “East meets West” fusion of strong, bitter chocolate chips and aromatic, salty nori in a sweet and chewy all-American cookie. Perfectly restoring and unusually delicious, for pokémon and trainer alike.

This recipe makes 12 Lava Cookies.
What you will need: A large mixing bowl, a wooden spoon, a pair of scissors, a small bowl, and a baking tray.
For the Lava Cookies:
85g / ⅓ Cup Butter (Melted)
125g / ⅔ Cup Dark Brown Soft Sugar
50g / ¼ Cup White Granulated Sugar
1 Large Egg (Room Temperature)
½ Teaspoon High Quality Vanilla Extract
125-150g / ¾ - 1 Cup Plain Flour
¼ Teaspoon Baking/Bicarbonate Soda
¼ Teaspoon Salt
75g / ¾ Cup Dark Chocolate (Chips or Chunks)
1 Sheet of Nori (Cut into small pieces)
To Garnish:
25g / ¼ Cup Dark Chocolate (Chips or Chunks)
1 Sheet of Nori (Cut into strips)
Making the Lava Cookies:
Preheat the oven to 170C/340F and have a baking tray ready.
Cream the melted butter, soft brown sugar and granulated sugar together until smooth. Add the egg and vanilla and mix until well combined.
Sieve in the flour, baking/bicarbonate of soda and salt. Stir gently with a wooden spoon, then add the chocolate chips and nori, and mix gently once again.
The dough should come together, and still be very moist/sticky, but able to be handled. If too loose, add more flour a tablespoon at a time. Add more melted butter a teaspoon at a time if it’s too solid.
Once at the right consistency, take a tablespoon of the dough, roll it in your hands into a ball, then place it on the prepared baking tray. Make sure the cookies have enough room to spread; I only baked 4 at a time.
Bake the cookies in the oven for 10-12 minutes, then remove them from the oven and allow them to cool slightly before removing them from the tray, and setting aside to cool completely.
Garnishing the Lava Cookies:
Once the cookies are cool, melt the chocolate in a clean bowl. Add a small blob of the warm chocolate near the bottom of each cookie, to act as a glue, then attach the strip of nori.
Once the chocolate has cooled, and the nori is stuck, turn the cookies over and repeat the process. Tuck the remainder of the nori strip up around the back of the cookie, and neatly press it against the chocolate to help the nori stick.
Once the chocolate has set, enjoy your Lava Cookies and feel your status refresh!
I really was impressed with how these cookies turned out! They’re ultra sweet, but the nori adds a fresh, sharp contrast. Feel free to try these with white or milk chocolate too. In the winter, or if in need of a little extra ‘fire’, a dash of ginger would be great for a warming touch. Certainly, the Lava Cookie recipe will act as my base from here on in when baking cookies, they’re so delicious, I’ve gotta nom ‘em all!

This recipe serves 1.
What you will need: A Moka Express/Espresso Maker/Cafetiere etc., a small mug and a small pan.
Ingredients:
75ml / 2.5 fl oz. Fresh Espresso/Strong Coffee
25ml / 0.85 fl oz. Vanilla Coffee Syrup
50ml / 1.7 fl oz. Almond Milk
100ml / 3.5 fl oz. Whole Milk
Optional Garnish:
Double/Heavy Cream
Feathers
Making Brewster’s Pigeon Blend:
In a small pan, warm the whole milk and almond milk together - don’t let it boil! Have your cup ready with the vanilla syrup filling the bottom.
Prepare your coffee. Once the almond milk and milk is near boiling point, pour it into the mug on top of the vanilla syrup.
Next add the shot of espresso on top, then swirl through with a little cream. Garnish with a few Brewster feathers.
Turning on my DS was a stressful affair, I tried to avoid looking at all those weeds… It’s just as well I had this cup of java to pick me up. Though Brewster would rather you took your coffee black, his legendary Pigeon Blend is a beautiful homage in gaming, but could you expect anything less?! For the record, I did research the idea of actually using ‘pigeon milk’ and soon discovered ‘crop milk’. Something you definitely don’t want in your morning coffee.

![Request: EarthBound – Peanut Cheese Bar
I was pretty much oblivious to EarthBound until I was introduced to the curious character Ness in Super Smash Bros; having never owned a classic Nintendo console growing up I was subject to the gaming tastes of whoever owned the console I was playing (I was not beyond using a fellow classmate and neighbour to sate my need to play Teenage Mutant Ninja Turtles). When I decided I was going to make this recipe I tried to source EarthBound from a friend who has an extensive retro games collection, but the fact he didn’t have it just instilled it’s cult status even more for me. However, I’m not without my EarthBound knowledge; I’ve read about it enough times in articles titled ‘gaming urban myths’ and ‘ultimate screwed up games’. Everyone kept asking for these Peanut Cheese Bars - I’d see the requests in my inbox and all I could imagine was some peanuts with cheddar cheese on top - melting and a little greasy… Then I remembered that cheese can be sweet and delicious too, I think the Mr. Saturns are definitely onto something!

This recipe makes 8 - 10 Peanut Cheese Bars.
What you will need: An 8x8 inch square spring-form or lose-base cake tin, a whisk, two mixing bowls, greaseproof/baking paper, cling film/saran wrap and a rolling pin.
For the Cookie Base:
175g / 1 ¾ Cups Flour
½ Teaspoon Baking Soda
½ Teaspoon Salt
110g / ½ Cup Butter (Softened)
85g / ¾ Cup Caster Sugar/Superfine Sugar
85g / ¾ Cup Soft Brown Sugar
½ Teaspoon Vanilla Extract
1 Egg
For the Chocolate:
150g / 1 Cup Chocolate
55g / ¼ Cup Butter
40g / ¼ Cup Crushed Salted Peanuts
For the Peanut Cheese Topping:
225g / 1 Cup Cream Cheese
170g / 2/3 Cup Smooth Peanut Butter (Skippy)
100g / ¾ Cup Icing/Confectioners Sugar
120ml / ½ Cup Whipping Cream
Making the Cookie Base:
Prepare the tin by greasing it with a little butter and lining the base and sides with greaseproof paper/baking parchment. Preheat the oven to 190C/370F.
In a large bowl beat the butter, caster sugar and brown sugar together until creamy. Slowly add the egg and continue to mix.
Gradually sift in the flour, baking soda and salt and mix well until a dough forms. If it’s very soft pop it in the fridge for about 30 minutes.
Place the dough between two large sheets of cling film/saran wrap and roll the dough out to roughly fit the base of your prepared tray. Transfer it to the tray and lightly press it in until the entire base is covered and even.
Bake in the oven for 10-12 minutes until the edges are golden brown. Leave to cool while you prepare the chocolate layer.
Making the Chocolate Layer:
Over a bain-marie melt the chocolate with the butter until smooth and shiny. Allow the mixture to cool slightly.
Once cooled pour the chocolate over the cookie base and spread it out until even. Sprinkle over the crushed peanuts and with the back of a spoon, gently press them into the chocolate.
Place in the fridge to chill for around 30 minutes while you prepare the peanut cheese topping.
Making the Peanut Cheese Topping:
In a large bowl gently mix together the cream cheese, smooth peanut butter, sugar and cream. Once combined whisk it until pale and fluffy.
Spoon the peanut cheese mixture over the now chilled chocolate layer and smooth it out.
Sprinkle on top a few more crushed salted peanuts if you like, then place in the fridge for several hours until firm and chilled.
Once chilled remove the combination from the tin carefully and cut it into bars.

When I say this recipe makes 8 - 10 Peanut Cheese Bars, what I really mean is it makes one awesome bar for one lucky person. Like me. Can I even describe how this tastes? Probably not. It’s the most incredibly crunchy, gooey, chocolately, salty and creamy combination. I played around with so many ideas in my head, swapping between a cheesecake, a more traditional sponge cake and even a pie. But I really wanted it to look and taste like something you might be able to buy in a wrapper in a shop. While my quest to find a copy of EarthBound to play continues, I certainly know what I’ll be gobbling when the time comes.

Request: EarthBound – Peanut Cheese Bar
I was pretty much oblivious to EarthBound until I was introduced to the curious character Ness in Super Smash Bros; having never owned a classic Nintendo console growing up I was subject to the gaming tastes of whoever owned the console I was playing (I was not beyond using a fellow classmate and neighbour to sate my need to play Teenage Mutant Ninja Turtles). When I decided I was going to make this recipe I tried to source EarthBound from a friend who has an extensive retro games collection, but the fact he didn’t have it just instilled it’s cult status even more for me. However, I’m not without my EarthBound knowledge; I’ve read about it enough times in articles titled ‘gaming urban myths’ and ‘ultimate screwed up games’. Everyone kept asking for these Peanut Cheese Bars - I’d see the requests in my inbox and all I could imagine was some peanuts with cheddar cheese on top - melting and a little greasy… Then I remembered that cheese can be sweet and delicious too, I think the Mr. Saturns are definitely onto something!

Oh, Pokémon. How many times can you essentially release the exact same game over and over and how many times will I relive the experience, just to be bitterly disappointed by any new species that isn’t the original 150 (or 151 depending on who you ask). I mean, apart from Girafarig who is the best Pokémon of the new generations. Shut up. Anyway, Pokémon love Poffins. They can make them smarter, better, faster, stronger… As a combination of the words Pokémon and muffin I figured this had to be something soft and slightly sweet (just like the Pokémon themselves). I did a lot of research into cakes and breads and came across the delightful anpan from Japan - a type of sweet, milky bun. The classic anpan recipe was the perfect base to create the well known light and fluffy Poffin.

This recipe makes 6 Poffins.
What you will need: A large mixing bowl, a sieve, a baking tray and tin/aluminium foil.
Ingredients:
75ml / ⅓ Cup Milk
1 ½ Tablespoons Butter
2 Tablespoons Sugar
½ Teaspoon Salt
190g / 1 ½ Cups Strong White Bread Flour
1 Egg (Beaten)
½ Teaspoon Fast-Action Dried Yeast
Variety of Food Colourings (Optional)
For the Filling:
High Quality Berry Jam/Jelly
Use any variety of berry or berries you like; cherry, strawberry, blueberry, raspberry etc.
To Garnish:
Icing/Confectioners Sugar
Water
Sprinkles
Preparing the Poffins:
In a pot on a low heat warm the milk, butter, sugar and salt together until the butter melts.
Pour the liquid into a large bowl, sieve in half the flour and mix well. Sprinkle in the yeast and stir until well combined.
Add the remainder of the flour and ¾ of the egg, continue to mix with a spoon until the dough comes together then use your hands to form it into a ball. (At this point you can split the dough up if you’d like to add any colouring. Do this by adding a few drops and following the next step.)
On a lightly floured surface tip the dough out and knead for about 10 minutes. This will warm the dough and make it firmer and smoother.
Split the dough up into evenly shaped portions, these will become your Poffins. Place them in a large, clean bowl and cover with cling-film/saran-wrap to rise for about 50 minutes, they should double in size.
Filling the Poffins:
Feel free to leave your Poffins plain but if you’d like to add a filling follow these steps;
Take one ball of dough at a time and gently flatten it out a little. Spoon some jam/jelly into the middle.
‘Pinch’ the dough around it, making sure it’s completely sealed. Turn it over and gently shape the dough into a Poffin shape, which is similar to an American football, and place on a baking tray.
Repeat this step for each of the potion of dough and feel free to fill each one with a different berry jam/jelly filling.
Making the Poffins:
Whether or not you’ve added a filling, leave the prepared Poffins somewhere warm to rest for about 30 minutes.
Preheat the oven to 180C/350F. Gently brush them with a little of the remainder of egg on top then place in the oven to bake for around 10-15 minutes. (If your Poffins are coloured, you might want to cover them in tin/aluminium foil to stop them from browning after a few minutes).
Once cooked remove from the oven and allow them to cool completely. Make some icing by mixing the icing/confectioners sugar with a little water, this will act as a glue.
Dip the sprinkles of your choosing in the prepared icing and carefully stick them to the Poffin for the finishing touch.
There’s no need to invite 4 of your friends over to help you stir these Poffins, I assure you. Feel free to create your own mini-game though. Maybe get your mom to shout “Left! Right! Slower!” at you while you make them, it’s totally up to you. These Poffins remind me of doughnuts but with all the pleasure of freshly baked bread; they’re certainly lighter and healthier. If Poffins can make a Pokémon more beautiful, I see no reason why this isn’t true for humans - I’m expecting to see Z-list celebrities selling these on shopping networks in the coming months.

![Request: Kingdom Hearts II – Sea Salt Ice-cream
You’ll notice the addition of hearts on this post and they will be added to past posts too - it’s to give you an idea of the level of difficulty the recipe is so you can pick a recipe to suit your ability should you wish to make something. Anyway, I can’t tell you the amount of requests I’ve had for Sea Salt Ice-cream - Kingdom Hearts certainly has an incredible fan base! So I thought I’d treat you all with the first post of 2012 because I’m just that good to you. I’ve learned that this is (or was) actually available at Tokyo DisneySea and that Tetsuya Nomura’s love for the treat explains its appearance in Kingdom Hearts II. Kingdom Hearts has a lot of delicious looking ice-creams in it, I feel like I’ve missed out now by not playing it when it first came out which upon reflection seems crazy considering one of my favourite games is Mickey’s Castle of Illusion for the Sega Mega Drive and the Disney-Final Fantasy combination sounds right up my alley. Though I have no idea what it should taste like I was excited by the prospect of flavoured salts and creating a twist on the classic vanilla ice-cream.

This recipe serves 4.
What you will need: A pot, a large bowl and 2 small bowls, a sieve, a wooden spoon, a medium container, a whisk, ice-cream moulds and wooden ice-cream sticks.
Ingredients:
½ Vanilla Pod
2 Tablespoons High Quality Sea Salt Flakes
125ml / ½ Cup Milk
75g / ⅓ Cup Sugar
250ml / 1 Cup Whipping/Heavy Cream
3 Egg Yolks
Blue Food Colouring
Ice
Preparing the Sea Salt Ice-cream:
Add half of the vanilla seeds to the salt. Rub the vanilla into the salt until well mixed – seal and leave to infuse.
If you don’t have an ice-cream machine (like me) place the container you’ll chill the ice-cream in into the freezer.
Warm the milk, sugar and rest of the vanilla pod together in a pot on a medium heat. Cover, remove from the heat once warmed through and leave the vanilla to fragrance the milk for about 30 minutes.
While the milk cools set up an ‘ice bath’ – half fill a large bowl with water and ice and place a smaller bowl inside. Pour the cream into the smaller bowl and set aside.
In another bowl whisk the egg yolks. Rewarm the now cooled and infused milk, gradually add the milk to the egg yolks whisking constantly. Once combined return the milk and egg to the pot.
Heat the mixture over a low heat, stirring constantly until it thickens and forms a custard. Do NOT let it boil! If bubbles or foam appear remove it from the heat immanently.
Sieve the custard into the bowl of cream over the ice bath. Stir well until it begins to cool, add the blue food colouring until the desired colour is achieved then place the bowl into the fridge to chill for several hours or overnight.
Making the Sea Salt Ice-cream:
Pour the chilled ice-cream mixture into the prepared frozen tray then return it to the freezer or use your ice-cream maker.
After about 40 minutes add the vanilla salt to taste and vigorously stir or whisk the mixture as it begins to set. Check on it every 30 minutes after this, continuing to mix well. Repeat this for about 2 – 3 hours every 30 minutes.
Once solidified take it out and allow it to soften. Once soft spoon it into the ice-pop moulds, be wary of air bubbles forming – it’s a good idea to mix the ice-cream around in the mould to try and remove as many as possible. If it’s too soft, pop it into the freezer for a bit before sliding in the wooden sticks and placing in the freezer to set.
To remove the ice-cream from the mould sit it in a bath of warm water until the outside begins to melt then carefully slide them out.
Feel free to keep this ice-cream in a tub or for a more authentic look use the moulds and wooden ice-cream sticks. For any doubtful British fans this sweet yet salty mixture means the ice-cream tastes less like a full dairy, or cream laden Cornwall style and more like an ice-cream van ‘99’ taste. For Americans I’d imagine the equivalent is what you’d call ‘soft-serve’ (if America is devoid of the classic 99 cone with a Flake – I feel sorry for you). And I don’t know what it is, blue is apparently an appetite suppressant but for me bright blue foods simply means “more delicious”. Cute and quirky Sea Salt Ice-cream is a surprising balance with a wonderful texture. Also if you have any left over vanilla salt it apparently goes wonderfully with certain fish.
